Knockdhu (anCnoc whisky), Old Pulteney and Balblair are three legendary old distilleries, producing some of the best whisky in the world. They’ve been around for 125, 193 and 229 years respectively. Time is enormously important in whisky, not only in aging excellent whisky, but also in learning the ins and outs of the particular stills. The distillery managers at these three distilleries have over 100 combined years of experience, most of which has been spent managing distilleries and producing stunning whisky. Over the decades of running these distilleries, they have perfected the fermentation, aging and distillation at each location. In this seminar, Nick Taylor will take you through the distillation process, explain the nuances of each distillery’s individual techniques and demonstrate how that impacts these stunning whiskies.
