At one time there were many craft distilleries in Ireland however, consolidation and large corporate ownership have shaped distilling in Ireland for a long time. Glendalough is a true craft distillery and one of our favorites.
Glendalough’s whiskeys bring quality and breadth to what was a ubiquitous category. If you thought you knew Irish whiskey, think again. I was thrilled to learn about the history of distilling in Ireland and to taste spirits that are well outside my expectations. I hope you will be too.
The spectacular countryside where the distillery is located is also home to some fine foraging. Foraging near a distillery almost always leads to gin. And a fine gin indeed… The terroir of the Wicklow Countryside is ’embottled’ using fresh foragings and a traditional (for whiskey) cooper pot still.
